Food Safety (basic)

 

Content:

 

  • Discuss the food safety policy within their place of work and how to ensure that they adhere to it

  • Discuss the food safety policy within their place of work and how to ensure that they adhere to it

  • Demonstrate an understanding of where germs come from, what problems they can cause and how to prevent their spread

  • Identify the conditions which may lead to contamination of food

  • Demonstrate and understanding of the need for stock rotation

  • Demonstrate an understanding of personal hygiene including, hand washing and personal protective clothing in relation to food safety

  • Demonstrate an understanding of the need for cleaning and disinfection of both premises and equipment

  • Demonstrate an awareness of the signs of food spoilage

  • Demonstrate an awareness of the principles and practice of safe handling of food including receipt of food

  • Describe their role in food safety management including, identification of hazards, any risks and control measures.

  • Demonstrate a knowledge of common food poisoning bacteria, their sources, and symptoms of illness

  • Describe the processes of food storage and preservation

  • Describe the principles of pest control

  • Describe their role in reporting and recording any monitoring procedures and untoward incidents, including isolating broken or defective equipment
